The Art of Pour Over

Water temperature, pouring technique, timing — everything affects the final flavour. Pour over brewing is a meditative moment of pure focus on coffee.

  1. Bloom (30 seconds)

    Pour a small amount of hot water to moisten all the grounds and allow the gas to release.

  2. First Pour (centre outward)

    Slowly pour in a circular motion from the centre outward to evenly saturate the coffee bed.

  3. Finishing Pours

    Maintain a steady water level, continuing to pour until the total water volume reaches the target amount.

  4. Extraction Complete (2:30–3:00)

    Once the dripping stops, remove the dripper and enjoy your finished cup.

The siphon uses steam pressure to push hot water up into the upper flask and bring it into contact with the coffee grounds — enchanting to watch and producing a distinctively sweet aroma. A nostalgic brewing method deeply rooted in Japan's traditional coffee shop culture.

Home Barista Tips

Six practical tips to elevate the quality of your daily cup.

Use beans within 2–4 weeks of roasting

Beans are more stable in flavour when given a short rest after roasting rather than used immediately. Store in an airtight container at room temperature after purchase.

Grind right before brewing

Coffee beans begin to oxidise the moment they are ground. Grinding just before brewing is the best way to get the most flavour.

Use water at 88–93°C

Don't use boiling water straight from the kettle — let it cool slightly first. A thermometer will help you manage temperature more precisely.

Pay attention to water quality

About 98% of coffee is water. Using soft water with a good mineral balance helps bring out the full character of the beans.

Keep your equipment clean

Old coffee oils cause off-flavours. Wash your dripper, kettle, and grinder promptly after each use.

Take notes on your recipes

Recording the amount of coffee, grind size, water volume, and brew time will allow you to recreate your ideal cup consistently.
